Kesté Pizza & Vino, the celebrated Neapolitan pizzeria in New York’s Financial District, is opening the doors of its kitchen for a rare, hands-on professional training experience. On April 26, 27 & 28, 2026, the restaurant will host a 3-day Neapolitan pizza course led by founder and master pizzaiolo Roberto Caporuscio — President of the Association of Neapolitan Pizzaiuoli (APN), international consultant, and one of the most recognized ambassadors of authentic Neapolitan pizza in the United States.

A Full Immersion Into the Art of Neapolitan Pizza

The intensive masterclass goes well beyond a standard cooking class. Participants will work side by side with Caporuscio inside a professional, operating pizzeria, covering every essential aspect of the craft: flour chemistry and selection, traditional dough preparation, hand-stretching techniques (staglio and stesura), topping methods and ingredient pairing, as well as wood-fired oven management with precise temperature control and timing.

The program is designed for aspiring pizzeria owners, working professionals looking to refine their technique, and serious enthusiasts who want to learn authentic Neapolitan methods — not shortcuts.
